Ingredients
For the dough:
3/4 cup warm water
1 package Instant Yeast
1 cup sourdough discard (cold, unfed)
2 teaspoons granulated sugar
1 teaspoon salt
2 tablespoon olive oil
2 tablespoons cornmeal
2 3/4 cups bread flour
Preparation
Know before you bake:
Using a stand mixer is highly preferred.
Begin by preheating oven to 450º.
Put warm water in the stand mixer bowl and sprinkle yeast package on top.
Add in sourdough discard, sugar, salt, olive oil, cornmeal, and flour.
Add in flour gradually and combine using dough hook. Knead until combined and a smooth dough forms (about 8 minutes).
Cover with plastic wrap and let rise until almost double (around 30 minutes in my kitchen).
Move dough to clean work surface and begin stretching. Do not use a rolling pin or you will remove all the air bubbles that the sourdough discard adds. (This recipe is for one large pizza crust but I usually remove about 1/4 of the dough for cheesebread)
